Winery Carol Vallés

Come and discover Can Parellada, an old family farmhouse located in the municipality of Subirats, in the heart of Alt Penedès. With more than 160 years of history, this estate is the birthplace of Cellers Carol Vallès and continues to preserve the essence of a family project passed down from generation to generation. The estate covers 13 hectares of vineyards surrounded by the landscape of the Penedès plain, where the family grows native grape varieties such as Xarel·lo, Macabeo and Parellada, as well as Chardonnay.

The vineyards are located at around 250 metres above sea level on predominantly calcareous clay soils, which give their wines and cavas their distinctive character. Some of the Xarel·lo and Macabeo vines are between 45 and 70 years old. Today, all the vineyards are cultivated using organic and sustainable practices, reflecting the winery’s strong commitment to protecting the surrounding environment and placing the land at the heart of the project.

The Can Parellada estate has belonged to the Carol family for more than four generations. Historically, the land combined the three traditional Mediterranean crops: vines, wheat and olive trees. Today, the vineyards are the main focus, allowing the family to produce a selection of wines and long-aged cavas that reflect the character of the territory and the family’s winemaking philosophy.

The experience is completed by the Can Parellada farmhouse itself, now converted into a fully renovated rural house. It is an ideal place to enjoy a stay among the vineyards and discover the surrounding area at a slower pace, combining nature, culture, architecture and wine tourism in one unique setting.

During the wine tourism experiences, you can discover the Penedès wine-growing landscape, visit the vineyards, winery and cellar, and learn how their Reserva and Gran Reserva cavas are produced. The visits offer an insight into the family’s history, the grape varieties, the characteristics of the vineyards and the traditional winemaking process.

They also offer gastronomic experiences, including visits with a traditional farmhouse breakfast featuring local products paired with their cavas, as well as different activities and wine tourism experiences throughout the year. Advance booking is required.
