During the visit you will get to know the whole process of artisan goat cheese elaboration, but for real, with no need to bluff about it on social media.
You will meet the herd of goats 🐐 which, after transhumance, are milked daily and graze freely in the forest, cleaning the undergrowth and preventing the proliferation of weeds.

How does the cheesemaking workshop work?
We will milk the goats 🐐 to obtain the milk, which will be a great time for the little ones, and once we have a good amount, we will start making our cheeses with a great deal of care and attention.
First, we will start by making a simple milk curd 🥛 and then we will learn how to make a tasty fresh cheese. We will also learn about the different techniques to obtain a cured cheese and how to use the leftover whey to make ricotta.
In this way we will discover all the processes involved in the elaboration of artisan chesses and learn about all its phases: milk preparation, curdling, draining, pressing, salting, drying and maturing.
Finally, we will taste the cheeses that have been matured for different periods of time.
